This recipe was a request by a friend of mine! A simple snack that needs some prepping time, but you can easily prepare the batter in the morning and have a great snack in the evening.
- 1 big white onion
- 500 ml milk
- 2 egg yolks
- 150 gr flour
- 1 tbsp salt
- 1/2 tsp paprika powder
- 1 tbsp neutral oil
- 200 ml cold beer
- frying oil
Whisk the egg yolks with the oil, then add the flour, salt and spices. Slowly pour in the beer whilst whisking continuously, until you have a smooth, thick batter as shown. Cover it in plastic wrap and set aside for at least three hours.
An hour before frying it’s time to put prepare the actual onion rings. Peel the skin and first layer off of the onion, then cut it into slices of 1/2 to 1 cm thickness. Press out all of the layers to create rings. Rings that are too small can be used in your next dish or cut up to serve with fries to make “friet speciaal” with curry and mayonaise. Put the rings into a bowl of milk, cover with plastic wrap and let it stand for about an hour.
When it’s time to prepare your snack, preheat the oil to 180°C. Drain the onions and pat them dry with paper towels. Take your onion rings one by one and cover them in batter, then put them into the oil to fry until golden brown. Take them out of the oil with a slotted spoon and put them on paper towels to absorb the excess fat.
Serve with your favourite dipping sauce and enjoy with a beer. Or two, we don’t mind. Prefect for game night 😉
