CopyCat Recipe: Bagels&Beans Date Pie

Sweet, sticky and yet crunchy, date pie! This recipe takes a little prepping time, but it sure is worth your time. A big cup of matcha latte and a piece of pie? It’s a date!

This recipe is technically not a copycat recipe, as the recipe is available on their website. I have not adjusted it, but slightly elaborated on the prepping and added some tasty pics. Shall we start?

Ingredients

  • 500 gr ripe, sun-dried dates
  • 250 gr butter
  • 150 gr brown sugar
  • 30 gr chopped walnuts
  • 200 gr (whole wheat) biscuits
  • 1 egg
  • 60 ml caramel syrup
  • grated coconut to garish

Take the dates and remove the stones, then cut them in to small strips and set aside. Break the biscuits into 1 cm pieces, chop and add the walnuts and set aside. Slowly melt the butter in a large saucepan and add the sugar, stirring until it has dissolved completely. Whisk the egg and add it to the sugar mixture. Add the caramel syrup and let is simmer for about a minute, then add the chopped dates, mix and simmer again for about a minute.

Stir in the biscuits and walnuts, then simmer for one more minute. Butter a pan and pour in the mixture, then spread it nice and evenly. Lightly press it down with a spoon until it’s smooth and let it set in the fridge for about two hours. Garnish with coconut.

Serve in small pieces, as this delicious date pie has got quite a pow impact. Enjoy with a large cuppa joe, tea or other hot beverage to sooth your soul. Take your time to indulge in this one.
