CopyCat Recipe: Hela Curry-sauce
This recipe is for both Fry-day and Copy Caturday! The Hela curry sauce is the most popular brand of “currysauce” in the Netherlands. It is a spicy kind of ketchup that is mostly eaten with fries and fried goods.
The most well-known use of currysauce is “Friet Speciaal” or Special Fries, where fries are topped with currysauce, mayonnaise and chopped raw onions. This is of course not the original recipe, but it’s close enough!
Ingredients
- 500 gr ketchup (homemade or store bought)
- 500 ml water
- 12 tbsp sugar
- 4 tbsp sweet soy sauce
- 4 tsp curry powder
- 2 tsp paprika powder
- 2 tsp black pepper (I use coarsely ground, but powder should work too)
- 1/8 tsp ground cloves
- 1 tbsp cornstarch
Add the ketchup, water, sugar, soy sauce and spices to a saucepan and bring to a boil. Stir until everything is mixed into a smooth sauce.
Add a bit of water to the cornstarch and add this to the sauce. Let it simmer for a few minutes, until it has formed a slightly thicker sauce. While this is boiling, sterilise a jar or bottle by rinsing it with boiling water.
Let the sauce cool slightly in the pan, until it stops simmering. Then add the sauce to your sterilised jar or pot, put on the lid and let it cool completely.
Enjoy your currysauce on your fries or fried snacks, but it’s also great in pasta dishes. The Dutch also love currysauce with their grilled cheese!
