Copycat Recipe: Subway Cookies Double Chocolate Chip!

My hubby loves chocolate, the darker the better. So by his request: Subway’s double chocolate cookies!

Rich, chewy and chocolate stuffed. Whether it’s because you need some for your coffee break with a friend, a homemade birthday gift or to impress your family at the annual picknick, these cookies are a real winner to fix that chocolate craving.

Ingredients

  • 250 gr butter, at room temperature
    (or microwave for 30 seconds on full power, right out of the fridge)
  • 40 gr white sugar
  • 180 gr light brown sugar
  • 2 tsp vanilla extract
  • 3 eggs
  • 250 g all purpose flour
  • 80 gr cocoa powder
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 150 gr semi-sweet chocolate chips
  • 150 gr white chocolate chips

Sift the flour with the baking powder and cocoa and set it aside. Beat the butter with the sugars until fluffy. Add the vanilla extract and the eggs one by one, beating well after each egg. Add in the sifted flour, one spoon at a time, while beating the mixture. Add the chocolate chips to the dough and combine. Cover the dough and refrigerate for one hour.

Preheat the oven to 200°C. Line a baking sheet with parchment paper. Use an ice cream scoop or cookie scoop to create cookie balls. Place the cookies on the baking sheet, allowing 3 cm between each cookie so they can expand. Bake for 8 to 12 minutes. Do not overcook, as Subway’s cookies are soft and chewy.

Allow cookies to cool for 20 to 30 minutes on the parchment paper, so they can get a little firmer! Otherwise they will break or the soft middle will stick to the paper.
