Speculaas with Almond Paste
Just like our lovely speculaas cookies, this treat is made with the traditional spices. The recipe is slightly different from the cookies, and it is filled with almond paste. This can also be made into a letter like the Dutch letter I showed you earlier.
Ingredients
- 250gr butter
- 300gr golden caster sugar
- 20gr speculaas spices
- 50gr milk
- 500gr flour
- 5gr baking powder
- 400gr almond paste
- peeled almonds (optional)
- milk or egg to brush the top
Mix everything together and knead it into a smooth dough, Flatten it into a disc and put it in the fridge for 30 minutes. You can now make the almond paste.
Preheat the oven to 175ºC.
Cut the dough in half and press it into a prepared baking pan, about 1cm in thickness. Next, roll out the almond paste, using ising sugar to prevent it from sticking and press it on top of the dough. Cover this with the remaining dough, brush with egg or milk. Press peeled almonds into the dough to garnish.
Bake the stuffed speculaas for 40-45 minutes.
