Home Made Fries

The Dutch love their fried snacks, like bitterballen, kroketten and frikandellen. They eat them with fries with sauce in many varieties like “patatje oorlog”, fries with peanut sauce, mayonnaise and raw onions, or “friet speciaal”, (literally, special fries) fries with mayonnaise, curry-ketchup sauce and raw onions or simply fries with one of the above.

Ingredients

  • slightly floury potatoes, in your desired quantity
  • frying oil, enough to fill your fryer
  • thermometer

Peel and wash the potatoes, then cut them into disks and cut that into fries. Make sure your fries have the same thickness.

Put the fries on a clean cloth and dry them thoroughly, so you remove as much water and starch as possible. Heat the oil to 140°C and bake the fries until they start to float.

Remove the fries from the oil and put them on paper towels to remove the excess oil.

At this point you can let them cool off completely and divide into portions, so you can freeze them and fry them later.

Heat the oil to 180°C and bake the fries until golden brown. Season with salt, pepper or vinegar, if that’s your thing.
