Poffertjes (Dutch Mini Pancakes)

When I saw the new commercial for a Dutch store starring Sarah Jessica Parker, I knew what my next recipe had to be: Poffertjes!

Poffertjes are a traditional Dutch batter treat resembling small, fluffy pancakes. Unlike American pancakes, they have a light, spongy texture. Poffertjes are served with powdered sugar and butter, and sometimes syrup or Advocaat. In wintertime they are also sold in the street at mobile stalls, together with other Dutch delights.

Poffertjes are not difficult to prepare, but a special cast iron pan or copperpan with several shallow indentations in the bottom is required. You can buy them on Amazon or Ebay!

Almost all Dutch supermarkets sell ready-made poffertjes that only need to be microwaved, and are sold complete with a sachet of powdered sugar and a small serving of butter. Supermarkets also stock mixes for poffertjes, to which only eggs and milk need to be added.

Ingredients

Yields: 45 poffertjes

  • 250 gr flour
  • 2 tsp baking powder
  • Pich of salt
  • 250 ml milk (roomtemperature)
  • 2 eggs
  • 2 tbsp golden syrup

I used golden syrup, but maple or simple syrup will do just fine!

Mix flour and salt and slowly add the milk and mix thoroughly. Add the eggs one by one, then add the syrup and mix into a smooth batter. Transfer the batter into a squeeze bottle or piping bag, so you can fill the pan easily.

Heat the poffertjespan and grease the indentations with oil or butter. Fill each hole halfway with batter. Turn them over with a fork when the edges are starting to become solid, but the middle is liquid. That way the poffertjes will be nice and round.

I prefer my poffertjes with golden syrup. but you can also enjoy them with a pat of butter and powdered sugar, or chocolate sauce, or Advocaat.
